This classic Greek dish can be adapted for a healthier twist. Here’s a lighter version of moussaka, perfect for a satisfying and nutritious meal. Ingredients: 500g lean ground lamb or beef 1 large onion, chopped 2 cloves garlic, minced 1 tbsp olive oil 1 tsp dried oregano 1/2 tsp cinnamon 400g chopped tomatoes 1/4 cup dry red wine (optional) Salt and pepper to taste 2 large eggplants, sliced 2 potatoes, sliced 500ml béchamel sauce (light version) * 1/4 cup grated Parmesan cheese (optional) Instructions: 1. Preheat oven to 180°C (350°F). 2. Heat olive oil in a large pan. Add onion and cook until softened. Add garlic and cook for another minute. 3. Add ground meat and cook until browned. Drain off any excess fat. 4. Stir in oregano, cinnamon, salt, pepper, and chopped tomatoes. If using, add red wine. Simmer for 15-20 minutes, or until sauce has thickened. 5. Lightly grill or bake eggplant and potato slices until slightly softened. 6. Layer eggplant, potato, and meat sauce in a baking dish. Top with béchamel sauce and Parmesan cheese (if using). 7. Bake for 30-40 minutes, or until golden brown and bubbly. 8. Let cool slightly before serving.
